If you are looking for something different to serve for Super Bowl Sunday XLIX, I’ve got just the right appetizer for you! Slightly salty and squeaky in texture, grilled halloumi cheese (made from goat and sheep’s milk) will not disappoint. Being Mediterranean in heritage, this special cheese pairs nicely with kalamata olives, hummus, pita, falafel, etc.
Here is what you’ll need to grill a block or two:
- 1 package of halloumi cheese from Trader Joe’s or specialty cheese store near you.
- olive oil
- kalamata olives
- 1 large tomato
- arugula for garnishing
Step one: Cut halloumi into lengthwise strips.
Step two: Lightly coat the bottom of a teflon coated frying pan (I prefer to use a Scanpan nonstick skillet) with olive oil and heat over medium-high heat.
Step three: Place cheese gently into hot oil and allow to brown for about a minute and a half on each side.
Step four: Garnish serving dish with arugula, kalamata olives, and tomato wedges.
Step five: Top with warm grilled cheese and drizzle with the remaining olive oil in the pan. Serve and enjoy!
Hosting a party of 10 or more? Cut the sticks of cheese into cubes and serve with toothpicks.
