Springtime Sweet Treat

There is nothing more satisfying than a refreshing sweet treat on a warm spring day. With the rising temperatures, comes barbecues and outdoor social gatherings. Sweeten up the weekend’s festivities with this delicious pineapple pie!

 

Here is what you will need to whip one up:

 

Pineapple and cool whip pie

 

  • 1 pre-maid graham cracker pie crust
  • 1/2 cup butter
  • 1 1/2 cups powdered sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 20 oz can crushed pineapple
  • 1 16 oz package Cool Whip

 

Begin by preheating the oven to 325 degrees Fahrenheit. In a small bowl, combine softened butter, powdered sugar, egg and vanilla. Whisk until smooth.

Carefully pour mixture into pie crust and bake for approximately 15 minutes. After 15 minutes, turn heat to 350 and bake for another 10 minutes. Remove from oven and let cool completely.

 

In the meantime, in a large bowl, combine Cool Whip and drained pineapple. Spread cream mixture evenly over pie crust and refrigerate for 3-4 hours.

Pair this easy-to-bake dessert with a chilled Moscato or Rosé, and serve cool. Bring this pie to your next potluck and get ready for the compliments to pour in.
