Celebrate St. Patrick’s Day with a satisfying sweet treat! First introduced to me by a college roommate, chocolate covered popcorn is one of those sweet and salty delicacies you cannot get enough of. Aside from it being truly delicious, it’s quite simple to prepare and easy to store the leftovers.
Here is what you’ll need to whip up a batch:
- 12 oz package candy melts or chocolate chips (I chose green candy melts in honor of St. Patrick’s Day!)
- 2 bags of buttery popcorn
Begin by melting chocolate in a microwave-safe bowl, or a double-boiler on the stove, stirring occasionally with a rubber spatula.
While chocolate melts, pop both bags of popcorn and set aside to briefly cool.
Once chocolate reaches a smooth consistency, slowly scoop popcorn little by little into bowl and cover completely in chocolate. Continue this process until all of the popcorn is covered, dividing into two bowls when necessary.
After that, line two cookie sheets with wax paper and spread out the finished product allowing it to harden for about 60 minutes.
Serve as a snack or dessert and enjoy! Store leftovers in airtight containers and chow down over several days.
